Sausage and Rice Casserole Recipe

This a family recipe from one of my friends.  You can substitute turkey sausage but I have the pork contributes to better result. – Crystal Johnson, MCCN Editor
Ingredients:
1 c. uncooked regular rice
2 c. chopped carrots
1 large onion, chopped
1 c. chopped celery
1 (14.5 oz) can chicken broth
1/4 c. water
1 pound pork sausage (Jimmy Dean HOT)
Directions:
Spread rice evenly in a lightly greased 3-quart casserole dish.  Spoon vegetables over rice.  Pour chicken broth and water over vegetables.  Cook sausage until browned.  Drain well.  Spoon sausage over vegetables.  Cover.  Bake at 350 for 30 minutes.  Remove from oven and stir well.  Cover.  Bake an additional 30 minutes.  Remove from oven, stir, serve, and enjoy!
