The White House Executive Chef is responsible for the planning, managing and preparing of all menus and meals for the First Family and their private entertaining, and official state functions at the White House, the official residence and principal workplace of the President of the United States.

The executive chef heads the three White House kitchens, a staff of four sous-chefs, and reports directly to the chief usher. The executive chef works with the First Lady, Chief Usher, White House Social Secretary and the Executive Pastry Chef to plan menus for State Dinners, receptions, and day-to-day non-official meals. The executive chef officially serves at the president’s pleasure but more commonly works with the first lady, and is appointed, or reappointed, by each administration.

The executive chef holds no purview over any of the desserts or pastries served at the White House. The executive pastry chef operates as a separate entity, but coordinates with the executive chef for all meals and events.

The current White House executive chef is Cristeta Comerford, the first woman to be selected for the post. She was born in the Philippines.  Her cooking style is American, French and Ethnic:

Pozole/Posole Recipe

Pozole (Nahuatl: potzolli, which means “foamy”; variant spellings: pozolé, pozolli, posole) is a ritually significant, traditional pre-Columbian pozolesoup or stew from Mexico. Pozole was mentioned in Fray Bernardino de Sahagún’s “General History of the Things of New Spain” circa 1500 CE. It is made from nixtamalized cacahuazintle corn, with meat, usually pork, chicken, turkey, pork rinds, chili peppers, and other seasonings and garnish.[3] Vegetarian and vegan versions also exist.

Ingredients for Posole

12 dried long red chile
10 lbs. Boned pork roast cut into 1″ cubes
1/2 head of garlic peeled and chopped
A large pinch of Mexican oregano
1/2 of a large onion, chopped
Large can hominy
Salt

Preparation

Break open the chiles and remove the seeds and veins. Put the chiles to cook in a medium sized pot. Cover with fresh water and gently boil until chiles are very soft. Let the mixture cool and using a favorite method, blend the chile and the water to make a paste and strain.

Meanwhile, put the cubed pork, oregano, garlic, onion and salt into a large heavy pot and cover with water. Boil meat gently for 30 minutes. When the meat is soft, add the chile and hominy and cook for 15 to 20 minutes until the mixture is boiling nicely.

To serve, ladle the posole into heavy bowls and serve with thinly sliced cabbage and radishes, quartered limes, oregano, chopped onion, and fresh corn tortillas. Besides these side dishes, posole is usually served with sodas or cervesas.

Dinner Rolls Recipe

I think my Aunt Ledora’s recipe is the best recipe for rolls in the world.  I don’t know the recipe but I know perfection when I taste.  Recently, I saw this recipe posted on my cousin’s facebook page.  She happens to be the daughter of the aunt that I mentioned. Unfortunately, it is not my aunt’s recipe but I am thrilled to finally add a dinner roll recipe to MCCN.

 Historically speaking, the origin of the dinner roll is not known but history points toward somewhere in Europe.

Ingredients

  • 4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 package dry yeast
  • 1 1/2 cups hot tap water
  • 1 egg
  • 1/3 cup softened butter

Serendipity 3 Restaurants in NYC and Vegas

It’s been around since the 50’s.  The location in New York is known for the famous frozen hot chocolate made even more famous by movie Serendipity starring Jon Cusak.

Vodka to Cause for Alarming Death-rate of Russian Men

(Reuters) – A quarter of all Russian men die before they reach their mid-fifties and their passion for alcohol – particularly vodka – is largely to blame, according to research published on Friday.

A study of more than 150,000 people found extraordinarily high premature death rates among male Russians, some of whom reported drinking three or more bottles a week of the potent clear spirit.

Introducing Paul Wahlberg and Wahlburgers

Wahlburgers is a Boston area restaurant owned by brothers MarkDonnie, and Paul Wahlberg. It is also the subject of an A&Ereality television series that debuted on January 22, 2014.  Both Mark and Donnie’s career success started in music.  Their popularity quickly made them two of the more popular Irish guys from Boston. a city known being heavily populated with Irish.  However, they are also part Swedish, English and French-Canadian.

Many people are familiar with two Wahlbergs — actors Mark and Donnie success in television and cinema. The former has appeared in dozens of movies, including “Ted,” “The Fighter,” “The Departed,” and “Boogie Nights,” and produced hit series like “Entourage” and “Boardwalk Empire.” The latter has an impressive résumé of his own, with credits including “Saw,” “The Sixth Sense,” “Band of Brothers,” and “Blue Bloods” (after being part of New Kids on the Block, of course).

Hawaiian Pineapple and Sweet Potato Recipe

A great tropical tasting dish that is easy to make. Great for a tropical luau or tiki party. A great comfort food with sweetness without a05c597f0fd5beafc6fa40acefae0330_Lthe fat.

Ingredients

• 6 large sweet potatoes
• 1 large can of crushed pineapple
• 1 cup brown sugar
• 1 dash of ground cinnamon
• 1 dash of ground ginger
• 1 dash of ground nutmeg
• 1 dash of ground cloves

Procedure 

Preheat the oven to 360 degrees. Butter or grease a baking dish. Bring the pot of salt water to boil. Add potatoes and then cook them until they are tender but firm. Drain, and place in a large bowl to cool then peel and chop in quarters. In a sauce pan, combine pineapple, sugar, cinnamon, ginger, nutmeg and cloves. Bring them all to a boil and then reduce heat. Place potatoes in a baking dish. Pour sauce over potatoes and bake for another 45 minutes.
