Coconut Custard Pie Recipe

Growing up my mom’s all time favorite pie was coconut custard pie.  It was on almost every holiday spread. I liked the custard but could not stand the coconut topping so I opted not to eat most times.  In honor of my mother, I thought I put a coconut custard pie recipe on the MCCN Menu.  This recipe comes from -Crystal J, MCCN Editor

  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 6 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup shredded coconut
