Serves 6

Ingredients:

3 small beets, peeled and chopped (222 grams)

1/2 cup green lentils

1/2 cup bulgur wheat

1/3 cup raw cashews

1 cup mushrooms

1/2 cup minced yellow onion

1 tsp fresh thyme

1/2 tsp salt

1/4 tsp pepper

1 tbsp + 1 tsp canola oil, divided

2 cups water, divided

pepperjack cheese for serving

lettuce for serving

sweet chili sauce for serving

Veggie Chili Recipe

This is just a simple recipe that I concocted over the years using Morning Star veggie crumbles.  For this recipe, I am going toVeggie chili double what I would usually use as a single woman with no kids.  If you are entertainng or have a family of at least for this should work.

 Ingredients.

  • 2 bags of veggie crumble
  • 2 cans of diced tomato
  • 1 Can of corn
  • 1 can of Black beans
  • 1 to 2 Habernero pepper ( If you don’t like it spicy, omit)
  • 1/4 of chopped Vidalia onion or whole small yellow onion chopped.
  • 2 tablespoons of chili powder.

Combine all the ingredients in a large pot.  Let Cook on stove on medium heat for 15 to 20 minutes.  Unlike meat, veggie crumbles are quickly permeated with flavor.   Serve and enjoy.  This should serve 4 to 6 people.  I enjoy this with cornbread as a side.

Our Daily Vitamins: Vitamin B15

Vitamin B15? Most of us have never heard of Vitamin B15. It’s not as widely known as Vitamins A, C, D or any of the other vitamins we hear about more often. What is this little known vitamin; what are its benefits; and where is it sold? Vitamin B15 is part of the group B vitamins and is also known as pangamic acid.  So how does vitamin B15 function in our bodies?  Vitamin B15 helps in the formation of amino acids in our bodies and may assist in the oxidation of glucose and cell reproduction.  In addition, it can also act as a stimulant to the endocrine system which ultimately encourages liver function to help with body detoxification.

Although the benefits of vitamin B15 have not yet been proven because it is not widely used, some medical professionals believe it

does have many beneficial uses in treating many symptoms and diseases.  In Russia, for example, scientists have shown that vitamin B15 can reduce the buildup of lactic acid in athletes which reduces muscle fatigue and even increases endurance.  Russia has also used vitamin B15 to treat alcohol related problems.  It is also used in Russia as a supplement to treat fatigue, asthma and allergies.

In Europe,  vitamin B15 has been used to treat premature aging because of both its circulatory stimulus and its antioxidant effects. It helps protect the body from pollutants, especially carbon monoxide.

In the United States, the FDA has not approved use of the vitamin and in fact, it has been banned for nearly two decades. However, in the U.S., Dimethyl glycine (DMG) is used as a substitute for B15. Doctors prescribe DMG with vitamin E and A as way to improve energy levels.

Pangamic Acid is found in:
– Whole grains such as brown rice
– Brewer’s yeast
– Pumpkin and sunflower seeds
– Apricot kernels
– Beef blood

Ethiopia: Telba (Flaxseed) Drink Recipe

Telba

Telba is a healthy and refreshingly creamy beverage. Be cautious of how much you drink, though, as it is a mild laxative.

Serving 4-6
1 c Flaxseed
6 c Water
1 to 2 T Honey

Heat a cast-iron skillet over low heat. Add flaxseed and dry roast, stirring for about 5-10 minutes. Remove from heat and cool. Place flaxseed in a spice grinder and grind to a powder. Sieve into a bowl. Add water and stir. Let set for about 10-20 minutes to allow solids to settle out. Strain into a pitcher. Add honey and chill.

Notes: Telba Firfit: Mix telba with broken up pieces of injera bread and heat. Serve as a side dish.

Chef Harris’ Tricks and Tips for Surviving the Holidays with Diabetes

http://eugeenapatterson.com-I find that with this diabetes I can be disciplined most of the time except during the holiday season. Who in their right mind is not tempted by the scent of gooey desserts and those traditional dishes like mac & cheese and cornbread dressing? Well, I am tempted but can’t afford to give in to it with this diabetes.

Chef Harris kindly sent me some tips that I’m going to share with you and think you should share too. This is what she said:

  • Use sweetener in your coffee and tea. Keep a tiny amount of a natural sweetener like agave nectar or honey in your pocketbook at all times for when you’re away from home.
  • Don’t over indulge in starches. I know that’s easier said than done but take only a tablespoon of dressing, mac & cheese or mashed potatoes. Have a bit more of the green bean casserole instead or best of all, green beans without all of the extra stuff in the casserole.
  • Have someone else fix your plate. This always works better than you fixing it. Tell them to give you only a tiny bit of everything. If there’s something there you know you shouldn’t have, be brave and tell them to skip it and give you a little extra of something safe and healthy.
