Italy: About Mozzarella

The word mozzarella comes from the Italian verb mozzare, which describes the cutting action that occurs, for example, when curds are cut apart from curdling milk. After removed, the curds are rolled into balls, loaves, or rolls. Mozzarella is traditionally made from the milk of water buffalo, an animal believed to have been brought to Italy around the 600s, although today most mozzarella that you’ll find in the United States is made of cow’s milk.
